The domestic animal associated with dairy herds is the OX. The male is called a bull, and the female is called a cow.
Unfortunately, the name for the specific gender has been popularised as the name of the breed, at least in the case of the female, and that is why we do not hear so much about Ox and Oxen.
Compare with (for example) "cocks" and "hens" in birds which are often taken to refer specifically to the domestic egg laying type that provides our breakfast!
